A Few Years ago I was like a kid in a candy store. I ran the "Got Guts" GIG 5K in Austin Texas.  It was great to see so many vendors at the "After Party".  Going from table to table, sample to sample and being in a world free of gluten was a rare treat for me at the time. 

The vendors ranged from Costco to specialty little start-ups selling their gluten free breads and cupcakes.  
GIG has grown a lot over the years and provides restaurant training to food service providers wishing to get certified as a safe kitchen.  Click on the above picture to check out there site.
